Winter Fruit Salad

Making Sunday brunch is one of our favorite things to do, and it’s even better when we’re surrounded by our favorite people. This past Sunday was a combination of food, friends, and fun with a menu of homemade strawberry waffles, bacon and eggs, and our favorite winter fruit salad. The fruit salad came out so delicious that The Greatest Kid On The Planet said I should put it on the blog. So here it is!

Down here in the South, summer melons and berries hang around longer than they do in most places, but by October, we’re ready for something different. This Winter Fruit Salad is made with some of the best flavors that Fall and Winter have to offer. You’ll find this recipe featured on Sara Welch’s food blog, Dinner At The Zoo. Topped with a simple Honey Citrus Dressing and some fresh mint leaves, this salad is just the right combination of tangy and sweet.

Here is what you’ll need:

1 1/2 cups kiwi, peeled and quartered
3 cups pineapple, cubed
2 cups mandarin orange or clementine segments
1/2 cup pomegranate arils

Simply slice up your fruit, place it in a bowl, and mix it all together.

You can use any combination of your favorite fruits. Sometimes when I make this recipe, I slice up some Bartlett or Bosc pears or add in some Gala or Jonagold apples.

We love pomegranate seeds and will eat them straight out of the bowl with a spoon. You can buy pomegranate arils at the grocery store, or you can buy a pomegranate and remove the seeds yourself, which is what I prefer. How To Seed A Pomegranate

The Honey Citrus Dressing included with this recipe is optional. This fruit salad is still delightful without it. But I like the zip you get from the lemon added to the honey, along with the different flavors of the fruit. This dressing is delicious on vegetables, too, and I’ve used it on green leaf salad as well.

To make the Honey Citrus Dressing, just use:

3 tablespoons fresh lemon or lime juice
3 tablespoons honey

Whisk the honey and citrus juice together in a bowl and pour it over your fruit. I love how simple and healthy this dressing is. The honey means no processed sugar, the lemon adds just the right amount of zing, and it pairs well with any kind of fruit.

Lastly, don’t forget the fresh mint leaves for that last little kick. We put fresh mint leaves on so many things. I always have a mint plant growing on my window sill.

This winter fruit salad is a delicious addition to any lunch or brunch, or even on its own. It made for a perfect Sunday brunch, and once we added in a little football, it was a perfect day!
