We love summer! It’s full of our favorite things like fun with family and friends in the sun and the surf. And now that The Greatest Kid On The Planet is in middle school, summer also means being back on the football field, and it doesn’t get any better than that!

Did you catch the full moon last weekend? It was mesmerizing! June’s full moon is known as the Strawberry Moon. According to the Old Farmer’s Almanac, Native Algonquin tribes of North America gave it that name because it was their sign to start harvesting the wild strawberries. Around here, we can’t get enough strawberries. So, in honor of the Strawberry Moon, we made a wonderful summer treat called French Strawberry Cake. This cake is so simple and so delicious. It’s sure to become one of your favorites.

Lately, we’ve been filling our days with our favorite things. Well, most of them, at least. We miss football! To compensate, we’ve indulged in extra helpings of family, friends, and food. Thank goodness for The Cookie Bible Santa Claus left for me under the tree last Christmas!

The Greatest Kid On The Planet has a sweet tooth like his mom, and anything I make with coconut is always a winner. There are dozens of recipes for coconut macaroons, but this one has become one of my favorites. Mainly because it consists of a handful of simple ingredients that I always have in my kitchen, and it takes very little time. And the results are decadent, little bites of coconut heaven!

Making Sunday brunch is one of our favorite things to do, and it’s even better when we’re surrounded by our favorite people. This past Sunday was a combination of food, friends, and fun with a menu of homemade strawberry waffles, bacon and eggs, and our favorite winter fruit salad. The fruit salad came out so delicious that The Greatest Kid On The Planet said I should put it on the blog. So here it is!

Down here in the South, summer melons and berries hang around longer than they do in most places, but by October, we’re ready for something different. This Winter Fruit Salad is made with some of the best flavors that Fall and Winter have to offer. You’ll find this recipe featured on Sara Welch’s food blog, Dinner At The Zoo. Topped with a simple Honey Citrus Dressing and some fresh mint leaves, this salad is just the right combination of tangy and sweet.

This week we’re focusing on things that make us smile. The Greatest Kid On The Planet sums up the good things in life into what he calls The Four Fs: Family, Friends, Football, and Food. With his first football game of the season coming up on Saturday, he’s so excited he can barely stand it. So, to help him get through the week, I made one of his favorites. We’ve just about eaten our weight in fresh fruit this summer, and we’re still not finished, but now it’s time for something sweet. This Fresh Fruit Tart made with vanilla pastry cream is absolutely decadent. It’s the perfect treat to celebrate any season.
