Summer Stone Fruit Salad

There are so many reasons to love summer; fun with friends and family, being out of school, the beach, and the food! Around here, we love fresh fruit and vegetables, and summer is the perfect time for both. This Summer Stone Fruit Salad from Gaby Dalkin of What’s Gaby Cooking is amazing! You won’t be disappointed!

I absolutely love peaches and cherries and could eat them by the truckload. Living in Georgia means we get an abundance of both in the summertime. So, when I found this recipe by Gaby Dalkin, I couldn’t wait to try it. If you haven’t checked out Gaby’s website, What’s Gaby Cooking, don’t wait! Her site is one I troll frequently for new recipes.

The combination of the stone fruit with tomatoes and feta cheese is YUM, and the Lemon Champagne Vinaigrette is to die for. Together, it’s a masterpiece. It gets two thumbs up from The Greatest Kid On The Planet, and that’s a perfect review!

Here is what you’ll need:

4 large heirloom tomatoes
1 cup heirloom cherry tomatoes
2 yellow peaches
2 white nectarines
1/2 small red onion
1/3 cup crumbled Feta
Fresh basil leaves
Fresh mint leaves
Kosher salt and freshly cracked black pepper

Make sure your fruit is ripe but still firm and cut it into wedges, and slice your onion nice and thin. Then simply toss the tomatoes, fruit, and onion together in a large bowl. Add the basil and mint leaves and salt and pepper to taste.

Don’t even think of leaving out the Lemon Champagne Vinaigrette. It’s crazy delicious, and you’ll make it again and again. We love it.

Just take:

1 lemon, juiced
3 teaspoons champagne vinegar
2 cloves garlic, finely chopped
1 shallot, finely chopped
1/3 cup olive oil
kosher salt and freshly cracked black pepper to taste

Combine all of these ingredients in a bowl and whisk them together. Then add it to your fruit salad and toss gently.

And enjoy!

I love this salad as a side dish to grilled steak or chicken skewers, but you’ll also find me eating it alone. It’s that good!
